Instructions

  1. Drain and rinse the soaked red beans. Set aside.
  2. Heat olive oil in a large pot over medium heat. Add diced onions and bell peppers. Sauté for about 5 minutes until soft and fragrant. Stir in minced garlic and sliced sausage, cooking until the sausage is browned.
  3. Mix in the Cajun seasoning, ensuring everything is well-coated. Add the red beans, chicken broth, and bay leaves. Bring the mixture to a boil.
  4. Reduce the heat to low, cover, and let it simmer for about 45 minutes or until beans are tender. Stir occasionally and add more broth if needed to keep the beans submerged.
