  • 1 teaspoon paprika
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt (or to taste)
  • 1/4 teaspoon black pepper
  • 1 cup plain Greek yogurt
  • 1/2 English cucumber, grated and squeezed dry
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon extra-virgin olive oil
  • 1 clove garlic, minced
  • 1 tablespoon chopped fresh dill (or 1 teaspoon dried dill)
  • Salt and pepper, to taste
  • 8 small flour or corn tortillas (use gluten-free if needed)
  • 1 cup cherry tomatoes, diced
  • 1 cup shredded romaine lettuce or baby spinach
  • 1/2 small red onion, thinly sliced
  • 1/3 cup pitted Kalamata olives, sliced (optional)
  • 1/2 cup crumbled feta cheese
  • Fresh parsley or mint, chopped, for garnish

Instructions

  1. Slice chicken breasts into thin strips for quicker cooking.
  2. In a mixing bowl, combine olive oil, lemon juice, minced garlic, oregano, paprika, cumin, salt, and black pepper. Toss chicken in marinade to coat well. Let sit for at least 10 minutes (up to 30 minutes if time allows).
  3. While chicken marinates, grate cucumber and squeeze out excess moisture. In a bowl, mix Greek yogurt, grated cucumber, lemon juice, olive oil, minced garlic, and dill. Add salt and pepper to taste. Chill until ready to serve.
  4. Heat a large skillet or grill pan over medium-high heat. Add chicken strips in a single layer. Cook for 3-4 minutes per side, or until golden brown and cooked through (internal temp 165°F). Remove from heat and let rest before slicing into bite-size pieces.
  5. Wrap tortillas in foil and warm in a 325°F oven for 5 minutes, or heat directly on a dry skillet for 30 seconds per side until pliable.
  6. Layer each tortilla with cooked chicken, tzatziki, diced tomatoes, lettuce, onions, olives, and feta. Garnish with parsley or mint and a squeeze of lemon if desired.
  7. Serve immediately and enjoy warm.
