- 4 cloves garlic, minced
- 1 medium head of cauliflower, cut into florets (about 4 cups)
- 8 ounces mushrooms, sliced
- Salt and pepper to taste
- 1 teaspoon Italian seasoning (optional)
- Fresh parsley, chopped
Instructions
- Heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute, or until fragrant.
- Add the cauliflower florets to the skillet. Stir to coat the cauliflower in the garlic oil. Cook for about 5-7 minutes, stirring occasionally, until the cauliflower starts to soften.
- Toss in the sliced mushrooms and continue to cook for another 5 minutes. The mushrooms should release their moisture and start to brown.
- Season the vegetables with salt, pepper, and Italian seasoning if using. Stir everything together, ensuring the seasonings are evenly distributed.
- Cook for an additional 2-3 minutes, or until the cauliflower is tender and the mushrooms are golden brown.
- Remove from heat and garnish with chopped parsley before serving.
Notes
For best results, keep the heat at medium to prevent burning. If veggies stick, add more olive oil or water. Let mushrooms sear for caramelization.
