Ingredients
- 1 1/2 pounds (24 ounces) sirloin steak, cut into 1-inch cubes (ribeye or New York strip also work)
- 1 tablespoon olive oil
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 1/2 teaspoon smoked paprika (optional, but recommended)
- 4 tablespoons (1/2 stick) unsalted butter, cubed
- 4 garlic cloves, minced or pressed
- 1 tablespoon fresh parsley, chopped (or 1 teaspoon dried parsley)
- 1/2 teaspoon crushed red pepper flakes (optional)
- Extra chopped parsley, for garnish
- Lemon wedges, for serving
Instructions
- Pat steak cubes dry thoroughly with paper towels.
- Cut steak into 1-inch cubes, keeping pieces uniform for even cooking.
- Season steak cubes with salt, pepper, and smoked paprika. Toss to coat and let sit for 5 minutes.
- In a small bowl, combine butter, minced garlic, chopped parsley, and red pepper flakes (if using). Set aside at room temperature.
- Heat a large cast iron skillet over medium-high heat for 2-3 minutes until very hot.
- Add olive oil and swirl to coat the pan.
- Add steak cubes in a single layer (work in batches if needed). Sear undisturbed for 2 minutes until a golden crust forms.
- Flip steak bites with tongs and cook another 1-2 minutes until browned on all sides but still medium-rare inside.
- Reduce heat to medium-low. Add the garlic butter mixture to the skillet.
- Toss steak bites in the bubbling butter for 1 minute until glossy and fragrant. Tilt the pan and spoon butter over the steak for extra flavor.
- Transfer steak bites to a plate, leaving excess butter in the pan.
- Garnish with extra parsley and serve immediately with lemon wedges.
