Description

This Creamy Crack Chicken Gnocchi is a comforting dish featuring tender chicken, pillowy gnocchi, and a rich, cheesy sauce with bacon and ranch seasoning.


Ingredients

  • 1 pound boneless chicken breasts, diced
  • 6 strips of bacon, chopped
  • 1 cup heavy cream
  • 1 packet ranch seasoning
  • 1 pack (16oz) gnocchi
  • 1 cup grated cheddar cheese
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. Dice 1 pound of boneless chicken breasts into bite-sized pieces. Chop 6 strips of bacon into small pieces.
  2. In a large skillet over medium heat, cook the bacon until crispy. Remove and set aside, leaving the drippings in the pan.
  3. In the same skillet, add the chicken pieces. Cook until golden brown and cooked through. Season with salt and pepper. Remove and set aside with the bacon.
  4. Reduce heat to low, add 1 cup of heavy cream to the skillet. Stir in 1 packet of ranch seasoning and mix well.
  5. In a separate pot, cook 1 pack of gnocchi according to package instructions. Drain and add to the skillet.
  6. Add the cooked chicken and bacon back to the skillet. Stir in 1 cup of grated cheddar cheese until melted and creamy.
  7. Taste and adjust seasoning if necessary. Garnish with chopped parsley for a pop of color.

Notes

If the sauce looks too thick, add a splash of chicken broth or milk to loosen it up. If it’s too thin, let it simmer a bit longer to thicken.
