  • 1 cup (150g) fresh strawberries, hulled and chopped (or thawed and drained frozen strawberries)
  • 1 cup (240g) Greek yogurt, plain or vanilla (whole milk or non-dairy)
  • 2 tablespoons (30ml) honey or maple syrup (or agave, to taste)
  • 1 cup (175g) semi-sweet or dark chocolate chips
  • 1 tablespoon (15ml) coconut oil (or butter)
  • Optional: chopped nuts, mini chocolate chips, flavored yogurt, other berries

Instructions

  1. Line a baking sheet or large tray with parchment or wax paper. Clear space in your freezer.
  2. In a blender or food processor, combine strawberries, Greek yogurt, and honey or maple syrup. Blend for 30-45 seconds until smooth and creamy, leaving some strawberry chunks if desired.
  3. Using a spoon or 1-tablespoon cookie scoop, dollop small mounds of the mixture onto the prepared tray, spacing them apart.
  4. Freeze the tray for at least 2 hours, or until the bites are solid.
  5. In a microwave-safe bowl, combine chocolate chips and coconut oil. Microwave in 20-second bursts, stirring each time, until melted and glossy (about 60-90 seconds).
  6. Using a fork, dip each frozen yogurt bite into the melted chocolate, swirling to coat. Let excess drip off and return to the tray.
  7. If desired, sprinkle with chopped nuts, freeze-dried strawberry dust, or mini chocolate chips before the chocolate sets.
  8. Freeze again for 15-20 minutes, or until the chocolate shell is set.
  9. Transfer to an airtight container and store in the freezer until ready to eat.
