  • 3/4 cup (170g) unsalted butter, softened
  • 1 cup (200g) packed light brown sugar
  • 1/4 cup (50g) granulated sugar
  • 2 large eggs, room temperature
  • 2 teaspoons pure vanilla extract
  • 1/2 cup (110g) packed light brown sugar (for filling)
  • 2 teaspoons ground cinnamon
  • 2 tablespoons (28g) unsalted butter, melted (for filling)
  • Pinch of salt (for filling)
  • 3/4 cup (90g) powdered sugar, sifted (for glaze)
  • 23 teaspoons milk (dairy or plant-based, for glaze)
  • 1/4 teaspoon vanilla extract (for glaze)
  • Optional: extra cinnamon for dusting

Instructions

  1. Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats. Set out butter to soften if needed.
  2. In a small bowl, mix 1/2 cup brown sugar, 2 teaspoons cinnamon, 2 tablespoons melted butter, and a pinch of salt for the filling. Set aside.
  3. In a large bowl, whisk together flour, baking soda, and salt.
  4. In a mixer bowl, beat softened butter, brown sugar, and granulated sugar on medium speed for 2-3 minutes until fluffy.
  5. Beat in eggs one at a time, mixing well after each. Add vanilla extract and mix until smooth.
  6. Gradually add flour mixture to wet ingredients, mixing on low until just combined. Do not overmix.
  7. Gently fold in the brown sugar-cinnamon filling with a spatula, creating ribbons of filling throughout the dough.
  8. Scoop dough into 2-tablespoon balls and place on prepared baking sheets, 2 inches apart. Flatten slightly and make a small indentation on top if desired.
  9. Bake one sheet at a time for 10-12 minutes, until edges are golden and centers look just set. Cool on sheet for 5 minutes, then transfer to a wire rack.
  10. While cookies cool, whisk together powdered sugar, 2 teaspoons milk (add more if needed), and vanilla extract for the glaze. The glaze should be thick but pourable.
  11. Drizzle glaze over cooled cookies and dust with extra cinnamon if desired. Let glaze set for 10-15 minutes before serving.

Notes

For gluten-free cookies, use a 1:1 gluten-free flour blend. For dairy-free, use vegan butter and plant-based milk. Don’t overmix the dough after adding flour, and swirl the filling for gooey ribbons. Store in an airtight container for up to 4 days or freeze for up to 2 months. Let cookies cool before glazing for best results.
